- 3/4 cup shredded cheddar jack cheese
- 1/2 cup chopped cooked bacon
- 1 green onion, diced
- 1/2 cup halved cherry tomatoes
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 8 - 4 inch flour tortillas, warmed

These easy Bacon Egg Breakfast Tacos are a delicious and healthy way to start out the morning. Save time by making the eggs the day before and keeping them in containers in the refrigerator.
Yield: 8 breakfast tacos
Melt the butter in a large skillet over medium heat.
Whisk together the eggs and water. Pour into prepared pan and fry eggs until set, stirring often. Season with salt and pepper.
Stir in the cheese and bacon. Cover until melted.
Top each tortilla with eggs, onion, tomatoes, avocado, and cilantro. Serve immediately.
