Chocolate Covered Marshmallow cookies

Ingredients

  • 1/4 cup plus 2 tbsp flour
  • 1/4 cup plus 2 tbsp whole wheat flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 3 tbsp butter, room temp
  • 3 tbsp light brown sugar
  • 1 egg
  • 9 large marshmallows, halved
  • 9 oz semisweet chocolate, chopped

Preparation

Step 1

Preheat oven to 350. In a medium bowl, whisk together flours, salt, baking soda, baking powder, and cinnamon. In a large bowl, using an electric mixer, beat butter and brown sugar on high until light and fluffy. Add egg and beat to combine. With mixture on low, add flour mix and beat until combined.
Drop dough by tbsps, 3 inches apart, onto 2 parchment lined baking sheets. Flatten cookies to 2 inches in diameter with a floured surface. Bake until dry and set, 7 minutes. Remove from oven and top each with a marshmallow half. Bake until soft, 2 minutes.
Remove from oven and, with a metal spatula, flatten each marshmallow. Let cool completely on wire racks.
Place chocolate in a medium heat proof bowl, melt in microwave or over double boiler. Place one cookie at a time on times of fork, submerge in chocolate, then tap fork on edge of bowl to remove excess. Place on a wire rack set over a baking sheet. Let cool in fridge 10 minutes.
