Chocolate Mint Chip Cookies

These cookies have been on the back-burner for a while now. I really wanted to make them because I am a sucker for chewy chocolate things. And mint is fabulous, as long as it's not peppermint because that is too close to toothpaste for me. So these cookies are perfect! But I will admit, the first bite I took immediately hit me like it's a Christmas cookie & I should have waited longer to make it. Now I kind of want Christmas to come. Okay, not really, but it would be perfect for Christmas, so hold on to this one for neighbor gifts!

Ingredients

  • 1 cup butter (2 sticks)
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 1/4 cup flour
  • 2/3 cup cocoa
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1 (12oz) package Guittard Mint Chocolate Chips

Preparation

Step 1

In a stand mixer with the paddle attachment, beat butter, sugar, eggs, & vanilla until light & fluffy.
Combine flour, cocoa, baking soda & salt in a separate bowl. Gradually add to wet mixture until combined.
Fold in mint chips.
Spoon cookie dough onto parchment lined baking sheets. Bake at 350˚F for 8-10 minutes (they will look underdone, but will finish baking on the pan as they cool.)
*Makes about 3 dozen medium/large cookies.
