Meatballs

Recipe from Biba, an Italian restaurant in Sacramento, CA. To be served with the Sunday Sauce recipe. I use 1/2 cup gluten free bread crumbs instead of the 2 slices white bread.

Ingredients

  • 2 Slices white bread (or 1/2 cup gluten free bread crumbs)
  • 1/2 cup milk
  • 2 lbs ground beef
  • 1 cup finely chopped onions
  • 3 TBSP chopped fresh parsley
  • 2 eggs
  • 4 TBSP grated parmesan cheese
  • 1 1/2 TBSP chopped garlic
  • Salt and Freshly Ground Black Pepper
  • 3 TBSP Olive Oil

Preparation

Step 1

1. In a bowl, soak the break in the milk. In a medium bowl, mix the ground beef, bread and milk, onions, parsley, eggs, cheese and garlic. Add salt and pepper to taste. If the mixture is dry, add 1/2 cup of cold water and mix well. Form the mixture into about 12 meatballs.

2. Place the meatballs and the olive oil in a saute pan and fry over medium to high heat until brown, 10 to 15 minutes, turning them regularly. Dry the meatballs on paper towels.
