Canadian Bacon Strata

Ingredients

  • 3 whole wheat english muffins, split and toasted
  • 12 ounces Canadian Bacon
  • 1 1/4 cups sharp cheddar cheese, shredded
  • 1/3 cup Parmesan cheese, finely shredded
  • 8 large eggs
  • 3 cups milk
  • 1 1/2 T. Dijon mustard
  • 1/4 t. hot sauce, optional
  • 1/2 t. salt
  • pepper to taste

Preparation

Step 1

Butter a 9 x 13 inch baking dish. In dish, alternately arrange, cut side down, muffin halves, and Canadian Bacon. Sprinkle with cheddar and Parmesan cheeses. In large bowl, whisk together eggs, milk, mustard, salt, a pinch of pepper and hot sauce until combined. Pour over muffins and bacon; cover tightly and refrigerate at least 2 hours or overnight. Preheat oven to 350.
Bake until puffed and set in the center, about 1 1/2 hours. Let stand 10 minutes before cutting and serving.
