Split Pea Soup
- 1 lb. (16 oz.) green split peas
- 1 medium onion, chopped
- 2 medium carrots, chopped
- 2 cloves garlic, chopped
- 1 Tbs. olive oil
- 8 oz. smoked ham steak
- 1 Tbs. ham base
- 2 tsp. Thimble Island Spice Co. Smoky BBQ Rub
- 6 cups water
In large pot or dutch over saute onions, carrots and garlic for 8-10 minutes in the olive oil.
Add diced ham and saute for another 5 minutes.
Rinse, drain and sort peas in colander.
Add the 6 cups of water to soup pot, add peas, Ham Base and Smoky BBQ Rub.
Bring all ingredients to a boil, then turn down to a low simmer and cover.
Cook for about 3 hours or until peas are tender stirring occasionally and adding water if necessary.
Add salt and pepper to taste.
