  • 8 oz of cooked pasta
  • 2 t vegetable oil
  • 1 # ground turkey
  • 1 chopped onion
  • 1 jar of spaghetti sauce or 1 1/2 C homemade sauce
  • 1 can stewed tomatoes
  • 1 can black olives drained
  • 1 1/2 mozzarella or Colby cheese
  • 1 small package of firm tofu if desired

Step 1

Cook pasta and drain per package directions.

Grate tofu if using.

Stir fry the ground turkey, onion, tofu if using, olive oil until browned and turkey is no longer pink.

Add spaghetti sauce, stewed tomatoes, olives, and the mushrooms to the ground turkey mixture.

Fold in the pasta and continue to heat until simmering.

Top with cheese, reduce heat, cover, and leave over low heat until cheese is melted.
