French Toast Fingers

A fun spin on the french toast sticks everyone loved as a child. Variation: After soaking in egg mixture, coat sticks in crushed cereal blend to provide more texture and depth to recipe. *Cornflakes or similar cereal

Ingredients
- 2 eggs
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/2 cup strawberry preserves (or other favorite)
- 8 slices day-old wheat bread
- Confectioners' sugar, optional
- Or use fresh fruit slices in place of preserves.
- Coat slices in crushed cereal for crunchy 'breading' instead of confectioners sugar, if desired.
Preparation
Step 1
1. In a small bowl, whisk the eggs, milk and salt; set aside. Spread preserves on four slices of bread; top with the remaining bread. Trim crusts; cut each sandwich into three strips.
2. Dip both sides in egg mixture. Cook on a lightly greased hot griddle for 2 minutes on each side or until golden brown. Dust with confectioners' sugar if desired.
