cookie - Healthier Peanut Butter Cookies

Ingredients

  • 1 cup spelt flour
  • 1/2 cup Bobs gluten free flour
  • 3/4 cup peanut butter
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil
  • 1/4 cup yogurt (I used coconut yogurt)
  • 1 egg (I used a flax egg)
  • 1 tsp baking powder
  • 1/3 cup chocolate chips

Preparation

Step 1

Preheat oven to 350. Mix the flour and the baking powder in a medium bowl and set aside. In a large bowl, mix the sugar, peanut butter, oil and coconut yogurt together. Add in the egg. Add in the flour. Lastly, fold in the chocolate chips. Spoon batter onto a lined baking sheet and bake for 10-13 minutes.
