Silky Chocolate Mousse Pie Gluten Free
This pie is rich with chocolate and has a silky texture.
- 1 teaspoon unflavored gelatin
- 2 tablespoon cold water
- 1 tablespoon boiling water
- 1/2 cup granulated sugar
- 1/4 cup cocoa
- 1 cup whipped topping, well chilled
- 1 teaspoon gluten free vanilla
- 1 gluten free pie crust or crust of your choice
Add the gelatin to a small bowl. Mix with two tablespoons of cold water until there are no lumps. Let it sit until it thickens, about one minute. Add boiling water and stir until the gelatin is dissolved.
In a separate mixing bowl that has been refrigerated add the sugar, cocoa, whipped topping, and vanilla extract. Beat with a mixer that has been set on low until the ingredients just start to combine, about thirty seconds. Raise speed on medium and beat for another minute.
Slowly add the gelatin and beat on low until well incorporated. After this, you can transfer the mixture to the crust of your choice, as long as it’s gluten free. Refrigerate for at least two hours before serving.
