Mexican frittata 1 Picture


  • 10 eggs
  • 1/2 t salt
  • 1/4 t black pepper
  • 3 T olive oil
  • 2 bell peppers - cored and thinly sliced
  • 1 medium onion halved and thinly sliced
  • 1 C shredded white cheddar
  • 1/2 C salsa



Step 1

Whisk eggs, salt and pepper and set aside.

Heat oil in skillet, add bell peppers and onions. Saute' 6-8 minutes.

Add eggs to skillet and stir into pepper onion mixture. About 1 minute.

Sprinkle cheese over egg mixture and reduce heat to low. Cover tightly and cook about 15 minutes. Remove from heat and let stand about 5 minutes.

Slide frittata onto platter or work surface and cut into wedges. Top with salsa and serve.
