Ingredients

  • 3 Eggs
  • 2 T. Soda
  • 1 Cup Oil
  • 1 T. Salt
  • 2 Cups Sugar
  • 1/2 T. Baking Powder
  • 2 T. Vanilla
  • 2 T. Cinnamon
  • 2 Cups Zucchini
  • 1 Cup Walnuts
  • 8 1/4 oz Pineapple (well-drained)
  • 3 Cups Flour
  • 1 Cup Raisins

Preparation

Step 1

Beat eggs, oil, sugar, and vanilla. Stir in zucchini and pineapple. Combine flour, soda, and salt. Stir into mix.

Bake in 2 loaf pans @ 350 for 1 hour.
