Caramelized onion and lentil soup

Ingredients
- 1 tbsp extra virgin olive oil
- 1 large yellow onion, thinly slicedz
- 2 cans of lentils, rinsed and drained
- 2 1/4 cups chicken or vegetable broth
- Kosher salt and pepper to taste
- If desired;
- 1/4 cup plain yogurt or sour cream
- 2 tbsp fresh herbs chopped such as parsley, chives, marjoram or a combination for serving

Preparation
Step 1
1. In a medium saucepan, heat oil over medium high heat. Add onion and cook, stirring occasionally, until soft and edges are browned, about 15 minutes. Add lentils and broth and seasoned with Salt and pepper. Bring to a boil, reduce haet to medium, simmer and cook, gradually smashing some lentils agianst the sides of the pan with a spoon to thicken soup, about 10 minutes. If desired serve with a dollop of yogurt or sour cream with fresh herbs sprinkle on top
