Mrs Dot's Banana Cream Pie

  • For pudding filling:
  • 1-1/2 cups sugar
  • 3 egg yolks
  • 3 tbls cornstarch
  • 3 cups milk
  • pinch of salt
  • 2 tsps vanilla
  • 1 tsp butter
  • 4-5 ripe bananas, sliced
  • 1 bag of vanilla wafers
  • For Meringue topping:
  • 3 egg whites
  • 6 tsps sugar
  • 1/2 tsp cream of tartar


Servings 6


Step 1

1. In a medium saucepan over medium heat, combine sugar, egg yolks, cornstarch, milk, salt, vanilla & butter. Cook until thick stirring constantly to prevent burning.
2. Let cool & thicken to room temperature before assembling the rest of pie.
3. When ready to make pie, slice bananas and preheat oven to 325 degrees.
4. While oven is heating, make meringue topping my combining egg whites, sugar and cream of tartar in a large bowl and beating with a mixer until stiff peaks form.
4. When meringue is set, assemble pie by coating sides and bottom of Pyrex pie pan with a very thin layer of the pudding. Follow this with a single layer of vanilla wafers, a single layer of the sliced bananas, and 2/3's of the pudding filling.
5. Repeat with a single layer of vanilla wafers, bananas & the remainder of the pudding filling.
6. top with meringue & bake for 12-15 minutes or until peaks on meringue are light brown.

Serve immediately.
