Tomato, Mozzarella and Bean Salad

Ingredients

  • 11 can (19oz) no salt chickpeas, drained and rinsed
  • 2 cups halved grape tomatoes
  • 1 cup mini fresh mozzarella balls, halved (4oz)
  • 1/3 cup minced red onion
  • 1/3 chopped fresh basil leaves
  • 1 Tbsp. olive oil
  • 1 Tbsp. balsamic vinegar
  • 1 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Preparation

Step 1

Place all ingredients in a large bow and mix well.

May be served immediately, or salad can stand at room temperature for up to 1 hour before serving.

Tomatoes will lose their flavor when refrigerated, add them at the last minute if making in advance.
