Ingredients
- Honey Nut Butter:
- 1-1/4 cup bran cereal with apples and almonds
- 1 cup buttermilk
- 1 egg slightly beaten
- 1/4 cup vegetable oil
- 1-1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1/2 cup butter softened
- 1/4 cup honey
- 3 tablespoons chopped almonds or pecans toasted
Preparation
Step 1
Combine cereal and buttermilk in large bowl, let stand 5 minutes. Add egg and oil, stir well. Combine remaining ingredients except honey nut butter, stir well. Add dry ingredients to cereal mixture, stir just until moistened. Spoon into greased muffin pans, filling 3/4 full. Bake at 400 degrees for 18 minutes for regular size muffins or 15 minutes for miniature muffins. Serve with honey nut butter.
Honey Nut Butter:
Cream butter until light and fluffy, blend in honey, a small amount at a time. Stir in almonds. Makes about 1 cup.
