Creole Sole

Ingredients

  • 1 green pepper; cut into strips
  • 1 rib celery; minced
  • 1/2 small onion; minced
  • 1 teaspoon olive oil
  • 1 cup fresh tomato; diced
  • 1 small bay leaf
  • 1/2 teaspoon fresh thyme; minced
  • 1 pinch ground clove
  • 1 dash tabasco sauce
  • 1 Salt and pepper to taste
  • 1/2 pound sole, flounder or other white fillet

Preparation

Step 1


Saute pepper, celery and onion in olive oil until tender but not brown.
Stir in tomato, bay leaf, thyme, cloves, tabasco, salt and pepper. Simmer
gently 5 - 10 minutes. Discard bay leaf. Coat shallow nonstick pan with
spray and arrange fish in pan. Spoon sauce over fillets. Bake, uncovered,
about 10 minutes at 375 °F until fish flakes easily with a fork.
