Ingredients
- 6 flounder fillets-thawed
- 1/2 cup kalamata olives, pitted & sliced
- 3/4 cup cherry tomatoes, halved
- 3 garlic cloves, finely minced
- 1 tsp. of thyme leaves fresh
- 2 tbsp. olive oil
- Salt and pepper
- Flour
Preparation
Step 1
Season fish with salt and pepper, dredge in flour. Over medium heat, add olive oil to pan. Brown fish on both sides & cook through. Remove from pan & place on platter. Toss olives, tomatoes, garlic, thyme, & squeeze of lemon in pan. Heat while tossing for 1 to 2 minutes. Add salt and pepper. Place on top of fish.
Serving Ideas
Serve with buttered orzo pasta and sauteed zucchini.
