Raspberry Purée

This is an all=purpose raspberry purée or coulis. A drizzle or two over the simplest dessert provides a polished, professional look - and an extra shot of great taste.

Ingredients
- two 8-ounce packages frozen raspberries in light syrup, thawed, or still frosty
- 2 tablespoons sugar
- 1 teaspoon fresh lemon juice
Preparation
Step 1
Put the ingredients in the work bowl of a food processor and process until smooth, 15 to 20 seconds. Push the mixture through a strainer. Use immediately or keep covered in the refrigerator. The purée will keep in the refrigerator for 2 days.
