My Famous Marinade for Vegetables

This is an old recipe of mine. It is very good to serve as a side for main dishes, or just as a munchie.

Ingredients

  • Marinade:
  • 3 cups salad oil
  • 1 cup white wine vinegar
  • 1 Tablespoon salt
  • 1 Tablespoon sugar
  • 1 teaspoon cracked black pepper
  • 1 # fresh young green beans
  • 1 head cauliflower
  • 1 1/2 # zucchini
  • 2 # small carrots
  • 1 head fresh broccoli
  • Fresh asparagus
  • 6 medium ripe tomatoes, cut in half
  • Lettuce
  • Can also include fresh whole mushrooms. If serving as an appetizer platter, include olives, mozzarella, etc.
  • Salt
  • Boiling water

Preparation

Step 1

Combine marinade items. Whisk well Set aside until ready to use

Prepare veges: Wash, trim all veges. Place vege at a time in boiling water just until crispy cooked. Do not overcook

As each vege cooking is finished, arrange in a baking dish. Pour a bit of the marinade over each HOT vege as it is taken out of water. Add asparagus, then tomatoes.

After all veges are placed in dish, pour remaining marinade over. Insofar as possible, single layer the veges.
