Ingredients
- 4 Tbsp. Unsalted butter, melted plus more for greasing the pan
- 1 2/3 cups unbleached all-purpose flour
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. kosher salt
- 1 1/4 tsp. ground allspice
- 1/2 tsp. baking soda
- 1 1/2 cups packed light brown sugar
- 1 1/4 cups mashed ripe banana (about 3 bananas)
- 2/3 cup crunchy natural peanut butter
- 2 large eggs
- 1 1/2 tsp. pure vanilla extract
Preparation
Step 1
Heat the oven to 350 degrees and arrange a rack in the middle. Coat a loaf pan that measures 9inches x 5inches with butter and set aside.
Whisk together the flour, baking powder, salt, allspice, and baking soda in a bowl to aerate and break up any lumps; set aside.
In a stand mixer fitted with the paddle attachment, beat the sugar, bananas, peanut butter, and butter on medium speed until evenly combined. Add the eggs and vanilla and beat until just blended.
Add the flour mixture to the banana mixture and mix on low speed until just incorporated and there are no white streaks. Pour the batter into the prepared loaf pan and bake until a wooden pick inserted in the center comes out clean with just a few crumbs remaining, 55 to 70 minutes.
Remove from the oven and let cool at least 5 minutes in pan. Remove the bread from pan and let cool completely on a wire rack.
