Ingredients
- 8 half pint jars
- 1 1/2 cups cider vinegar
- 6 1/2 cups white sugar
- 1 cup shredded carrot
- 1/2 cup minced red bell pepper
- 15 habanero peppers seed half and mince(process)
- 2 (3oz.) packages of liquid pectin

Preparation
Step 1
Stir vinegar and sugar over heat until dissolved, add carrot and bell pepper
Bring to a boil and simmer 5 min.- skim foam
Add habanero and boil 5 min. more
Fill jars to 1/4 in. from the top.
process for 5 in. on rack, remove and cool
Check seal
