Roasted Asparagus with Grated Cheese

  • 1 lb asparagus
  • 2 TBSP evoo
  • 2 TBSP balsamic vinegar
  • 1/4 cup Parmesan
  • Kosher salt
  • Fresh cracked pepper

Preparation

Step 1

Heat oven to 400*. Arrange spears in a single layer in a shallow baking dish or sheet pan. Drizzle 1 TBSP olive oil over spears, tossing to coat lightly. Roast until tender, 8-10 minutes. Sprinkle with remaining olive oil and the balsamic vinegar, cheese, salt, and pepper to taste.
