Ingredients

  • 4 salmon filets
  • 2 tbs butter, melted
  • 2 tbs olive oil
  • 1/2 cup red onion, chopped
  • 3 or 4 cloves garlic, minced
  • 1/2 cup chopped green olives with pimentos
  • 2 tbs parsley
  • 3 tbs gin
  • 1 tbs white vermouth
  • 1/2 cup heavy cream (I use fat free half and half)
  • Salt and pepper to taste

Preparation

Step 1

Preheat ove to 350 deg
-saute onions, garlic, olives, parsley in butter and oil until softened; add salt and pepper
-add gin and vermouth
-off heat add cream
-in lightly greased or sprayed baking dish place salmon and pour sauce over fish
-bake for 20-25 minutes
