Ingredients

  • 2 medium tomatoes, quartered
  • 1/4 c water
  • 4-6 cloves of garlic, pressed
  • Salt and pepper to taste
  • 1 1/4 # ground beef
  • 3/4 # ground pork
  • 2 eggs, slightly beaten
  • 3/4 c bread crumbs
  • 2 Tblsp sliced scallions
  • 1/2 c chopped parsley
  • 2 tsp oregano
  • 1 tsp basil
  • 1/2 c Romano cheese grated
  • 3/4 c ketchup
  • 1 tsp Worcestershire sauce
  • 3 shakes hot pepper sauce
  • 1/2 tsp salt
  • 2 strips half fried bacon

Step 1

Blend in a blender the tomatees, water, garlic, salt and pepper into a smooth sauce. Pour into a small uncovered suacepan and simmer. Set oven to 350. In a hot skillet, half-fry bacon 2 min or so. In a large bowl thoroughly mix beef, pork, eggs, bread crumbs, scallions, parsely, oregano, basil cheese, ketchup, Worcestershire and hot sauces, and salt. Place in a 5x7 loaf pan and arrange bacon on top. Spoon the froth from the tomato sauce and pour over the meatloaf. Bake 1 hour 15 min. Remove from oven, drain grease, serve hot.
