Step 1
Beat all ingredients briskly in a bowl for 1/2 minute. Scrape sides of bowl, beat 1 & 1/2 minutes longer. (Batter will be smooth and thin.) Refrigerate for an hour. Fill muffin tins 1/4 full with oil, heat in 400F oven, half fill muffin tins with batter, don't overfill. Bake for about 15 minutes or until brown.
