Laura's Macaroni Salad

Ingredients

  • 1 1lb box elbow
  • 3 medium carrots, grated
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 3-4 celery stalks, chopped
  • 6 hard boiled egg, finely chopped
  • 1 (32 oz) mayonnaise

Preparation

Step 1

Cook elbows, drain. Leave in colander and run cold water or until cooled. Put in a large bowl. Add all ingredients with half a jar of mayonnaise. Mix well. Make the day before - then add the rest of the mayonnaise. Add the salt and pepper the day of serving.
