If you like spicy "southwestern style" dishes, this one is very good. Easy to put together and when you serve it with a green salad its a complete meal. I usually serve this dish with chips and salsa also. It's simply delicious !! :)

Southwest Cheeseburger Impossible Pie 1 Picture

Ingredients

  • 1 lb. lean ground beef
  • 1 large onion (chopped)
  • 1/4 teaspoon of seasoned salt
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • a dash or worcester sauce
  • 3/4 cup shredded sharp cheddar cheese
  • 1/4 shredded pepperjack cheese
  • 1 can of mild rotel
  • Note: Be sure to thoroughly drain and squeeze out all the juice from the rotel can before adding to the recipe
  • 1 can of corn which has been throughly drained OR 1 cup of thawed frozen corn
  • 1 can of black beans which have been thoroughly drained
  • 1 cup of milk OR 1 cup of evaporated milk
  • 1/2 cup of Original Bisquick mix
  • 2 eggs

Preparation

Step 1

Spray a 9 inch deep dish pie plate with non-stick cooking spray. Cook beef and chopped onion in a skillet over medium about 10 minutes or until beef is brown. Drain excess fat. Stir in salt, garlic powder and worcester sauce. Stir in the corn and black beans and then spread in deep dish pie plate. Sprinkle the rotel over the top of the beef and vegetable mixture in a thin layer. Next, sprinkle the shredded cheeses on top of the beef mixture. In a small bowl, whisk together the milk, eggs and Bisquick. Make sure you try to get as many lumps out as possible, however if a few small lumps remain thats o.k. as they will just bake in. Pour the bisquick mixture over beef mixture. Bake in oven for 25 minutes or until a knife comes out clean after it has been inserted in the center of the dish. It's Yummy !!
