Chocolate Glaze

This recipe is very simple and can easily be doubled (or tripled!). Refrigerate any leftover ganache -- it’s wonderful reheated and served over ice cream.

Ingredients
- 1/2 cup heavy cream
- 1 heaping cup semisweet or bittersweet chocolate, chopped
- 1/2 teaspoon vanilla
Preparation
Step 1
Heat 1/2 cup heavy or whipping cream over low heat or in the microwave until bubbles form around the edges. Remove from the heat and pour about half of the cream over 1 cup chopped semisweet or bittersweet chocolate (or chocolate chips), stirring slowly until most of the chocolate has melted. Add the remaining cream, and 1/2 teaspoon vanilla (if desired); stir till everything is well combined. If small pieces of chocolate remain unmelted, heat the mixture briefly in a double boiler or in the microwave (heat for 20 to 30 seconds at a time on medium or low power). Don’t overheat, or you risk burning the chocolate. Let stand for 5 to 10 minutes, until lukewarm.
Yield: about 1 cup glaze.
