Ingredients
- 2 1/4 cups all-purpose flour
- 1 cup sugar
- 1 cup butter, softened
- 1 egg
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 cup English or almond toffee bits
- Sugar, if desired

Preparation
Step 1
Heat oven to 350°F. Combine all ingredients except toffee bits in large bowl. Beat at medium speed, scraping bowl often, until well mixed. Stir in toffee bits.
Shape dough into 1-inch balls. Place 2 inches apart onto ungreased cookie sheets. Bake 8- 11 minutes or until edges are very lightly browned. Sprinkle warm cookies with sugar, if desired.
Variation:
Chocolate Chip Sugar Cookies: Substitute 1 cup mini real semi-sweet chocolate chips for toffee
