    large onion, chopped

    tsp cooking oil

    tbsp all-purpose flour

  • 2

    cups 1" asparagus spears

  • 2

    cups milk

  • 1

    can (14 oz) chicken broth

  • cups potatoes, peeled and cubed

  • ¼

    tsp salt

  • tsp ground pepper

  • 1

    cup (4 oz) cheddar cheese, shredded

  • 1

    small tomato, seeded and chopped

  • cup light sour cream


In a large saucepan, cook onion in hot oil until tender. Sprinkle flour over onion and stir to coat. Add the asparagus, milk, chicken broth, potatoes, salt and pepper. Cook and stir until thickened and bubbly; reduce heat. Simmer covered for 10-12 minutes or until vegetables are just tender, stirring occasionally. Add cheddar cheese, tomato and sour cream; stir until cheese melts.
