Wild Rice Soup

Ingredients

  • 3 cups chicken broth
  • 2-3 large potatoes, peeled and diced
  • 9 slices bacon, cut in small pieces
  • 1 med. onion, chopped
  • 1 & 1/2 cup cooked wild rice
  • 2 pints half and half
  • 8 oz. montery jack cheese, shredded
  • salt and pepper to taste

Preparation

Step 1

Cook potatoes in chicken broth until tender. Puree in blender. In large pan saute bacon and onion together until tender. Add all ingredients into a large pot. Heat on low until cheese melts. Serves 12

Garnish with green onions!
