CHEESE BARS

Ingredients

  • Crust:
  • 1/2 cup (1 stick) butter
  • 2 teaspoons sugar
  • 1/2 teaspoon grated lemon rind
  • 2 tablespoons milk
  • Pinch salt
  • 1 cup plus 2 tablespoons cake flour
  • Filling:
  • 2 packages ( 8 ounce) cream cheese softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon grated lemon rind
  • Pinch salt
  • 1 cup chopped almonds
  • Icing:
  • 1 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 4 teaspoons water

Preparation

Step 1

Crust:

Beat butter sugar and lemon rind in a small bowl of electric mixer. Gradually add milk. Stir in salt and flour, blend well with fingers. Pat into ungreased 9x9x2" baking pan. Bake in 400 degree oven for 15 minutes. Remove from oven. Lower heat to 300 degrees.

Filling:

Beat cream cheese in large bowl with electric mixer. GRadually beat in the sugar, egg, lemon rind and salt until well blended. Stir in the almonds. Pour over the baked crust. Bake in 300 degree oven for one hour. Remove from oven to wire rack.

Icing:

Combine powdered sugar, cinnamon and water in small bowl, spread over warm cheese bars. Cool, the refrigerate. Cut into bars when thoroughly chilled. Can be stored covered in refrigerator.
