Pepper Crusted Maple Glazed Salmon

Ingredients
- 3/4 cup maple syrup
- 1/4 cup soy sauce
- 4 6 ounce salmon fillets
- 1/4 cup coarsely ground black pepper

Step 1
In small bowl or plastic bag, mix maple syrup and soy sauce. Arrange
fillets so that marinade completely covers fish. Marinate in the
refrigerator for as long as possible, a minimum of 4 hours but 24 hours is
ideal). Turn salmon every few hours.
Spray oil on 10 x 10 inch sheet of aluminum foil. Pat pepper on topside
only of salmon. Place fillets, pepper side up, on foil.
Bake on top rack of over for 7 minutes at 500 °F . (Syrup may cause fish to
smoke while cooking). Salmon can also be grilled directly over hot coals
for about 3 minutes per side. Avoid overcooking.
