cup maple syrup
cup soy sauce
6 ounce salmon fillets
cup coarsely ground black pepper
In small bowl or plastic bag, mix maple syrup and soy sauce. Arrange fillets so that marinade completely covers fish. Marinate in the refrigerator for as long as possible, a minimum of 4 hours but 24 hours is ideal). Turn salmon every few hours. Spray oil on 10 x 10 inch sheet of aluminum foil. Pat pepper on topside only of salmon. Place fillets, pepper side up, on foil. Bake on top rack of over for 7 minutes at 500 °F . (Syrup may cause fish to smoke while cooking). Salmon can also be grilled directly over hot coals for about 3 minutes per side. Avoid overcooking.
