Ingredients
- 1 whole chicken, cut into quarters
- 3/4 cup apricot preserves
- 2 Tbsp. red wine vinegar
- 1 tsp. salt
- 1/4 tsp. coarsely ground black pepper
Preparation
Step 1
Preheat oven to 400°F.
Arrange chicken, skin-side up, in roasting pan. Season with additional salt and pepper; bake 30 minutes.
Meanwhile, in small bowl, mix apricot preserves, vinegar, salt, and pepper.
After chicken has baked 30 minutes, spoon apricot mixture over it and continue baking 15-20 minutes basting occasionally with drippings in pan, until chicken is fork tender and juices run clear.
