    medium onions; chopped

    cup celery; finely chopped

    tablespoon garlic; minced

    ounce tomato; diced, undrained

    small bay leaf

    teaspoon Salt

    teaspoon ground pepper

  • 1/4

    teaspoon oregano

  • 1/4

    teaspoon rosemary

  • 1/4

    teaspoon thyme

  • dash allspice

  • dash Cinnamon

  • 1/2

    cup water

  • 1/2

    cup red wine, white wine or clam juice

  • 2

    teaspoon red wine vinegar

    ounce Clams; chopped undrained

    pound seafood - shrimp, crabmeat, etc.

Directions

1. Heat oil in large stock pot over medium high heat until hot. Add oinions, celery, and garlic; cook 5 minutes or until onions and celery are tender. 2. Add tomatoes, potato, bayleaf, salt, pepper, oregano, rosemary, thyme, allspice, cinnamon, 1/2 cup water, wine and vinegar. Simmer 30 minutes or until potato is tender. 3. Add seafood. Cook 2 - 3 minutes or until shrimp turn pink.
