Balsamic Roast

Ingredients

  • 1 4 lb roast - such as chuck, rump, or eye of round roast
  • 4 onions, quartered
  • 1 cup balsamic vinegar
  • 3/4 cup soy sauce
  • 1/2 cup water
  • 1/2 cup brown sugar
  • pepper
  • 1 cup beef broth
  • 1/2 cup dry white wine
  • 5 cloves garlic, chopped
  • 4 - 5 bay leaves

Preparation

Step 1

Season roast generously with black pepper. Place onions in high sided roasting pan. Place roast on top of onions. Mix all remaining ingredients in a large bowl. Pour into roasting pan. Cover and cook at 325 degrees for 3 - 3 1/2 hours. If desired, add vegetables (carrots, celery, potatoes) about 45 minutes before the end of cooking time.
