Garlic Aioli

Ingredients

  • Spicy Aioli:
  • 3/4 cup mayonnaise
  • 3 cloves garlic, minced
  • 2 1/2 tablespoons lemon juice
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup mayonnaise
  • 1 1/2 teaspoons lemon juice
  • 1 teaspoon Frank's hot sauce
  • 1 small garlic clove, minced
  • Salt and pepper
  • The Real Deal:
  • 2 tsp. Dijon mustard
  • 1 ⁄2 tsp. kosher salt
  • 3 cloves garlic, mashed into a paste
  • 2 egg yolks
  • 1 cup canola oil

Preparation

Step 1

Mix mayonnaise, garlic, lemon juice, salt, and pepper in a bowl. Cover and refrigerate for at least 30 minutes before serving.

Variation:
Whisk mustard, salt, garlic and egg yolks together in a medium bowl; while continuing to whisk, slowly drizzle in canola oil until emulsified.
