Kiwi-Watermelon Salsa

In the summertime when watermelon is on sale, this salsa is great alternative to traditional tomato salsa. It's refreshing and perfect for a picnic or barbecue. Serve with baked tortilla chips or toasted pita wedges.

While you chould always be sure to wear gloves when working iwth jalapenos or wash your hands well afterwards (and keep the children clear of them), the good news is that the heat in jalapenos is known to naturally speed up your metabolism.

Ingredients

  • 1 c. diced peeled kiwifriut (about 2 large or 3 small)
  • 1 c. diced watermelon
  • 1/3 c finely chopped red onion
  • 1 tbsp finely chopped cilantro
  • 2 tsp minced seeded jalapeno chile pepper (wear
  • plastic gloves when handling)
  • 2 tsp line juice
  • pinch of salt, or more to taste

Preparation

Step 1

In a medium glass or plastic mixing bowl, gently stir together the kiwi, watermelon, onion, cilantro, and jalapeno untilwell combined. Add the lime juice and salt and stir to combine. Serve immediately or refrigerate in an airtight container for up to 1 day.
