Ingredients

  • I put a little glaze on back of the cookies. Here is the recipe I used:
  • 1 1/4 c. gluten-free flour blend (I used Silvana's)
  • 1/2 c. tapioca starch/flour
  • 1/2 c. potato starch
  • 2 tsp. xanthan gum
  • 1 tsp. salt
  • 1 c. unsalted butter
  • 1 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 tsp. lemon extract
  • food coloring
  • 2 c. powdered sugar
  • 3 tbls. milk
  • 1 tsp. vanilla

Preparation

Step 1

1. Preheat oven to 350 degrees. Lightly grease baking sheets.
2. In a large mixing bowl, combine first 5 ingredients.
3. In the large bowl of a mixer, combine butter and sugar and beat for 3 minutes until mixture is a pale yellow.
4. Add in egg, vanilla and lemon extract.
5. Add dry ingredients, slowly mixing until dough forms. Place bowl in refrigerator for 30 minutes.
6. Use the cookie press to make cookies in desired shape. If dough becomes too sticky when working with it, chill again.
7. Bake in preheated oven 11 - 12 minutes until light brown on the edges. Remove and let cool.
