Ingredients

    cup all-purpose flour, sifted

  • 1/2

    teaspoon baking powder

  • 1/4

    teaspoon salt

  • 1/8

    teaspoon baking soda

  • 1

    cup firmly packed light brown sugar

  • 8

    tablespoons (1 stick) butter, melted

  • 1

    large egg

  • 2

    tablespoons hot water

  • 1

    teaspoon vanilla extract

  • 1/2

    cup chopped peanuts

  • 1 1/2

    cups miniature marshmallows, divided

  • 1

    cup miniature chocolate chips, divided

Directions

Preheat the oven to 350ºF. Grease two 8-inch pie plates. Sift flour, baking powder, salt and baking soda into a large bowl. Combine the brown sugar and butter and mix well. Add to the flour mixture and mix well. Beat egg lightly in a small bowl. Add hot water and vanilla extract and beat well. Add to brown sugar mixture and mix well. Stir in peanuts, half the marshmallows and half the chocolate chips. Spoon equal portions of the mixture into the prepared pie plates. Sprinkle remaining marshmallows and remaining chocolate chips on top. Bake for 20 minutes. Cool on wire racks for at least 15 minutes before slicing.
