Sausage and Zucchini Boats

Ingredients

  • Zucchini
  • 1/4 lb. sausage
  • 1 small onion, chopped
  • 1/2 cup parmesan cheese
  • 1 egg, slightly beaten
  • 1/4 tsp. salt
  • 1/4 tsp. thyme
  • pepper and garlic salt
  • 1/2 cup, cracker crumbs

Preparation

Step 1

Boil Zucchini in salted water until tender. Cut the zucchini in half and scoop out the inside and place in a bowl, mush up.
Cook the sausage and brown. Add the chopped onion. Drain away the fat. Dum in the squash and add the parmesan cheese and the slightly beaten egg. Add the salt, thyme, pepper, garlic salt and cracker crumbs. Fill the zucchini shells with the mixture and sprinkle cheese on top. Bake in a 350 degree oven for 1/2 hour.
