Sausage & Apple Baked French Toast

Ingredients

  • 16 oz Maple Roll Sausage
  • 2 apples, peeled, cored & thinly sliced
  • 2 T butter
  • 1/4 cup dried cranberries
  • 1/2 cup orange juice
  • 1 teas orange zest
  • 1 loaf (16 oz) hearty white bread, cut into 1" slices
  • 3 cups whole milk
  • 6 eggs
  • 1/2 teas cinnamon
  • Maple syrup

Step 1

In large skillet over medium heat, crumble and cook sausage until browned. Drain. In same skillet, melt butter. Add apple slices and sauté until tender, about 5 minutes. Add cranberries, orange juice and zest and simmer 3 minutes. Remove from heat & stir in sausage.

Spray a 9X13 baking pan with cooking oil spray. Overlap bread slices in pan to fit. Spoon sausage & apple mixture on top and in between bread slices.

In bowl, whisk milk, eggs & cinnamon until well blended. Pour over bread & sausage. Cover and refrigerate overnight. In the morning preheat oven to 350. Uncover pan and bake for 50 to 60 mins or till browned & custard is set. Serve with maple syrup.
