Ingredients
- 4 oz neufchatel cheese, softened
- 1/2 C reduced fat sour cream
- 1/4 C confectioners sugar
- 1/2 t vanilla extract
- 4 gingersnaps, crushed
- 1 1/2 C fruit (fresh or frozen)
Preparation
Step 1
Combine cheese and sour cream in bowl and beat on high with an electric mixer until smooth.
Add sugar and vanilla and beat until well combined. Reserve 4 teaspoons of mixture.
Fill 4 small parfait glasses with 2 T of cheese mixture. Add some cookie crumbs and a layer of fruit. Add one more layer each of cheese mixture, cookie crumbs, and fruit. Finish by dabbing 1 T of reserved mixture on top of each parfait, and garnish w/ extra fruit.
Chill 30 minutes.
