Ingredients

  • 1/4 cup (60 mL) Balkan-style plain yogurt
  • 2 tbsp (30 mL) lemon juice
  • 1 pinch salt1 pinch pepper
  • 1 can (19 oz/540 mL) chickpeas, drained and rinsed (or 2 cups cooked chickpeas)
  • 1/2 cup (125 mL) halved grape tomatoes
  • 1/4 cup (60 mL) diced celery
  • 3 tbsp (45 mL) diced red onion
  • 3 tbsp (45 mL) chopped fresh mint
  • 2 tbsp (30 mL) chopped fresh flat-leaf parsley

Step 1

In bowl, stir together yogurt, lemon juice, salt and pepper. Stir in chickpeas, tomatoes, celery, onion, mint and parsley until combined.
