Microwave Peanut Brittle

Ingredients

  • 1 c. sugar
  • 1/2 c. light corn syrup
  • 1 c. raw peanuts
  • 1 t. butter or margarine
  • 1 t. vanilla
  • 1 t. baking powder

Preparation

Step 1

In 2 qt. casserole, stir together sugar, syrup, and 1/8 t. salt. Stir in peanuts and mix well. Place in microwave and cook 4 minutes on high, stir, then 4 min. at cook cycle 2. Stir in butter and vanilla. Mix well. Cook cycle 1 for 1 min. Add soda; stir. Mixture will be foamy. Pour into buttered 15 x 10 x 1” baking pan. Cool. Break into pieces. Makes 1 pound.
