Spagetti with Fresh Tomatoes, Herbs & Mozzerella

Ingredients

  • 1 lb. spagetti
  • 2 lbs fresh tomatoes, peeled, seeded & diced( try sliced cherry tomatoes)
  • 8 oz mozzerella diced
  • 2 T chopped fresh basil, oregano, marjoram
  • 1 T chopped fresh thyme
  • 1/2 cup olive oil
  • salt & pepper to taste

Preparation

Step 1

Start cooking spaghetti in boiling salted water.
Put tomatoes, herbs & cheese in big bowl.
Heat oil until smoking hot and pour over mixture in bowl.
Cook spaghetti until el dente, drain & add to sauce in bowl
Toss well, until pasta is covered. Cover bowl with plate and allow to stand
2 minutes so cheese melts
