Lynn's Sausage Stuffed Peppers

Ingredients
- 6 anaheim peppers
- 1 pound bulk Italian sausage; hot or mild
- cheese

Step 1
Blanch peppers for a minute or so; take out of water and cool; slice in
half lengthwise and remove seeds and ribs.
Crumble and cook sausage until done but not dried out. It will cook more in
the oven so don't overcook.
Fill peppers with sausage and sprinkle cheese on top.
Bake at 375°F until cheese is completely melted and slightly browned, about
15 minutes.
