Jumbo Shrimp with Charred Corn and Avacado Salsa

Ingredients

  • 1 can of corn ( or 3 cobs)
  • 2/3 c diced red pepper
  • 1/4 c diced sweet onion
  • 1 tsp crushed garlic
  • 2 diced avacados
  • 1/4 cup chopped cilantro or parsely
  • 2 tbsp of freshly squeezed lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp hot chili sauce or minced jalapeno
  • 1/2 tsp salt

Preparation

Step 1

1) In hot non stick skillet sprayed with vegetable spray, saute the corn 5 minutes or until browned

2) Remove from the heat and add the bell pepper, onion, garlic, avacado, cilantro, lemon juice oil and hot sauce

3) In a non stick grill pan or bbq, grill the shrimp for apprx 6 minutes or until cooked.
Serve with salsa
